We use state of the art extruding machines for our short cut pastas, however we only extrude thru bronze dies (never Teflon) because the best quality pasta in Italy is always “trafilato al bronzo” - bronze-extruded. Our base Semolina pastas are made from certified organic durum wheat semolina, Petaluma farms fresh organic brown eggs, olive oil and sea salt. Flavored pastas incorporate organic flavors as well. Our production processes set us apart from competing pasta factories. For example, besides our small crafted processes, our spinach and herb pastas are called “verde vivente” or living green because we do not cook the organic herb or spinach before making the pastas. This yields a very vibrant green color, fresh flavor and retains many more nutrients than cooking of the flavor base before production. We work with our accounts to help achieve success.
